Sugar-Free Meringue Cookies

- 2 large egg whites
- 1/8 tsp cream of tartar
- 1/2 cup sweetener of your choice
- 1/2 tsp vanilla extract
- 1 cup tiny peanut butter pieces
Start by preheating the oven to 225 degrees.
Separate egg yolk from egg whites.
Beat egg whits in a bowl using a mixer, until you see bubbles forming.
Add 1/8 cream of tartar and continue mixing.
Beat into soft peaks and add sugar.
Beat into stiff peaks.
Add the mixture to a pastry bag with a star tip.
Place 1 inch drops of meringue on a baking sheet and bake for 40 minutes.
Turn off oven and leave cookies inside for another 30 minutes.
Sprinkle mini tiny peanut butter pieces.
