Ingredients

  • 2 C. all-purpose flour
  • 1 tsp. salt
  • 1 Tbs. baking powder
  • 2 C. sugar
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 3/4 C. vegetable oil
  • 2 (6 oz.) jars strained plum
  • 3 large eggs, beaten
  • 1 C. chopped pecans
  • 1 C. confectioner's sugar
  • 2 tsp. confectioner's sugar
  • 4 oz. plum-apple baby food
  • 2 Tbs. milk

Preheat oven to 350 degrees. Grease and flour a 10-inch tube pan. In a large bowl, combine flour, salt, baking powder, sugar, cinnamon and cloves. Stir in the oil, baby food and eggs. Fold in pecans. Pour batter into prepared tube pan. Bake for 50-60 minutes, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. In a small bowl, combine confectioner's sugar, 4 oz. plum baby food and milk for glaze. Stir until smooth. Drizzle over top and sides of cooled cake.
