Sugar Snap Pea, Potato, and Chive Saute

Ingredients
- 1 lb. new red potatoes, quartered
- 2 Tbs. olive oil
- 10 oz. fresh sugar snap peas, trimmed
- 1/4 C. fresh chives, chopped
- salt and pepper, to taste
Directions
Cook potatoes in a large pot of salted boiling water just until tender. Drain. Heat oil in a heavy large skillet over medium heat. Add sugar snap peas and saute 2 minutes. Add potatoes and saute until heated through. Add chives and season with salt and pepper.
Serve with: Flank Steak with Peanut Sauce
