  • ½ C. almond paste
  • 6 T. butter, softened
  • ½ C. sugar
  • 3 eggs
  • 1 1/3 C. flour
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • 2 C. cranberries
  • Powdered sugar to dust

Preheat oven to 325 degrees. In a large bowl, use an electric mixer to beat together almond paste, butter, and sugar until pale and fluffy. Beat in eggs until well combined. In a separate bowl, combine flour and baking powder. Gradually add this into your batter, mixing well. Stir in vanilla and almond extract and then gently fold in cranberries. Pour batter into a greased cake pan and bake for 45 minutes until an inserted knife comes out clean. Dust with powdered sugar and serve.
