Sugared Black Currant Sauce Over Cottage Cheese

- 2 C. black currants
- ¾ C. brown sugar
- 3 T. orange juice
- ½ C. red wine
- 1 (16 oz.) container cottage cheese
In a large sauce pan, combine currants, brown sugar, orange juice, and red wine. Bring to a boil and immediately reduce heat to a simmer. Simmer for 10 to 15 minutes until sauce has thickened. Spoon over ½ cup of cottage cheese per serving.
