  • 2 eggs
  • 3/4 C. extra virgin olive oil
  • 1 3/4 C. coconut milk
  • 1 Tbs. vanilla extract
  • 1/3 C. dry red wine
  • 1 C. white whole wheat flour
  • 1 C. unbleached flour
  • 1 C. cocoa powder, unsweetened
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. sea salt
  • 1/2 C. milk chocolate chips

Preheat oven at 350 degrees F. In a large mixing bowl, beat eggs. Stir in milk, vanilla and red wine. Add whole wheat flour and stir until mixed. Repeat stirring with unbleached flour and cocoa powder until mixed well. Add baking powder, soda and salt. Stir in chocolate chips. Pour in prepared pan. Smooth top evenly. Bake for 30 to 35 minutes. Remove from oven and let it cool before cutting into squares.
