  • 1 1/2 cup warm water
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 pack active dry yeast
  • 4 1/2 cups flour
  • 2 ounces melted butter
  • 10 cups water
  • 2/3 cup baking soda
  • 1 egg yolk + 1 tablespoon water
  • Granulated sugar

Begin by combining water, sugar and salt in bowl. Sprinkle yeast on top and allow to foam. Add flour and butter. Knead until smooth dough forms. Oil dough and allow it to rise in a warm place for one hour.

Preheat oven to 450 degrees. In large pan, bring water and baking soda to a boil. Turn dough out onto a floured surface. Divide dough into eight pieces. Rope each piece to form a pretzel shape. Place on baking sheet.

Place each pretzel in boiling water for 30 seconds, then back to the sheet. Brush each pretzel with egg mixture, sprinkled granulated sugar and sprinkle salt. Bake 12 to 14 minutes.
