  • 2 beets, cooked, halved, and quartered
  • 1 Tbs. oil
  • 1 orange
  • 1 lime, zest and juice
  • 2 Tbs. onion, finely chopped
  • 2 Tbs. red wine vinegar
  • 6 C. arugula
  • 2 Tbs. cilantro, chopped
  • 2 oz. feta, crumbled
  • salt and pepper, to taste

Remove the tops of the beets, peel, and cook in lightly salted water until tender. Cut in half and quarter once cool. Peel the orange and section it. Collect the juices in a bowl and use a knife to separate the membranes. Zest the lime and set aside. Juice the limes into another bowl and add back the zest. Add onion, vinegar, and orange juice. Drizzle in the oil and whisk to combine. Add the beets and toss to coat. Season with salt and pepper. Cover and let stand at room temperature for 1 hour. Put arugula on plate and sprinkle with cilantro. Spoon beets and dressing over arugula and sprinkle with orange and feta.
