This is a easy tart made with pre-made puff pastry dough and covered in sweet cream cheese and summer berries! Serve as a breakfast treat or a healthy dessert.

  • 1 (12 oz.)sheet ready rolled puff pastry
  • 1 C. light cream cheese
  • 1/4 C. icing sugar, sifted
  • 1/2 tsp. vanilla extract
  • 3/4 C. fresh blackberries
  • 3/4 C. fresh raspberries
  • 16 strawberries
  • 1 Tbs. powdered sugar

Preheat the oven to 400 degrees and line a baking tray. Place the pastry on the tray and score a rectangle into the pastry, 1 to 2 inches from the edge. Poke the middle of the pastry with a fork. Bake in the oven for 12 to 15 minutes and let cool completely.

Place the cream cheese, icing sugar, and vanilla in a medium bowl and beat until light and smooth, or about 1 minute.

Pour onto the cooled pastry and smooth with a spatula. Cover the cream cheese with fresh berries and dust with powdered sugar.
