Summer Chicken Pasta
- 5 chicken breasts
- 1 1/2 boxes penne or any pasta (tri color makes this exciting and festive)
- 2 6-8 oz. containers crumbled feta cheese
- 1 6-8 oz. container shredded parmeasan cheese
- 3 Roma tomatoes
- 20 Greek olives
- 1 C. olive oil
- 6 cloves garlic
To make sauce, puree ingredients and set aside.
Bake chicken at 400 degrees for 20 minutes, turn and bake additional 20 minutes.
Cook pasta and drain. Add 1 container feta cheese to warm pasta. Cool pasta and add remaining ingredients when cool.
