Summer Cuke Soup
Ingredients
- 2 tsp. vegetable oil
- 5 cucumbers, peeled, seeded, chopped
- 3 cloves garlic, minced
- 2 chopped onions
- 2 1/2 C. vegetable broth
- 1/4 C. chopped fresh dill
- 1 C. milk
Directions
In a large saucepan, heat the oil over medium heat and sauté cucumbers, garlic, and onions 6 minutes until onions are transparent. Add broth and simmer 15-20 minutes, until cucumber is tender. Process soup in blender until smooth. Stir in dill and black pepper to taste. Chill 2 hours. Stir in the milk just before serving.
Yield: 6 servings
