  • 3 bunches basil
  • Parmesan cheese
  • Pine nuts
  • Salt and pepper
  • Garlic
  • Oil
  • 2 C. Roma tomatoes
  • Penne pasta
  • Mozzarella

For the pesto, wash the basil and pluck the leaves. Put them in a food processor and add the oil, Parmesan cheese, garlic, pine nuts, salt, and pepper. Grind and taste. Add more of each ingredient as desired.

Bring a pot of water to a boil and add the pasta. Wash and halve the tomatoes. Cook the tomatoes for 10 minutes, drain, and put the pasta back in the pot. Add the pesto, mozzarella, and tomatoes. Stir until the mozzarella is melted. Serve warm or cold.
