Summery Black Bean Salad

This is colorful and delicious; a refreshing addition to any meal. Especially good for carry ins, because it can withstand long periods of time with no refrigeration. One of my most requested dishes.

Ingredients

  • 2 14.5-oz. cans unseasoned black beans, rinsed
  • 1 can Mexican corn, rinsed
  • 1 C. chopped tomato
  • 1/2 C. chopped scallions
  • 1/4 - 1/3 C. chopped cilantro
  • 1 tsp. garlic salt
  • cayenne pepper to taste
  • 3/4 C. red wine vinaigrette dressing

Directions

Mix ingredients together. Chill at least 20 minutes (overnight is better). Serve.
