  • 12 oz. pasta of choice
  • 1 8.5-oz. jar sun-dried tomatoes packed in olive oil
  • 2 cloves garlic
  • coarse salt
  • freshly ground pepper
  • 1 C. packed fresh basil leaves
  • 1 T. milk or cream
  • 1 1/2 C. cooked chicken, shredded
  • 1/2 C. freshly grated Parmesan cheese

Prepare pasta according to box directions. Meanwhile, add the sun-dried tomatoes, garlic, salt, pepper, and basil into a food processor. Blend until well combined. Transfer mixture to a skillet and add milk, Parmesan, and chicken. Stir occasionally over medium heat until chicken is heated through. Drain pasta and combine with sauce and chicken mixture. Serve immediately
