This Sun Dried Tomato Glazed Chicken is a pure yummy delight and will work great as a summer dish or a festive dish. We are using golden balsamic vinegar in this recipe along with sun-dried tomatoes for glazing purposes. However, you can leave out the vinegar if you so wish. To cook the chicken to a tee (and avoid them from burning, if you are really worried about that!), we recommend that you cook it first in the pan and then transfer it to the even once it is lightly cooked but is still pink in the middle.

  • 4 chicken breasts, boneless & skinless
  • 1 C. sun-dried tomatoes
  • 2 Tbs. balsamic vinegar
  • 2 Tbs. fresh basil, chopped
  • 1 Tbs. Honey
  • 2 Tbs. olive oil
  • salt and pepper to taste

Combine the tomatoes, the honey, the vinegar, and the basil for the glaze.
Heat the olive oil in a heavy skillet
Season the chicken on all sides with pepper and salt to taste
Cook the chicken for 6-8 minutes on both sides
Once the chicken has taken a light opaque hue, transfer it to the oven and cook for another 4-5 minutes at 350 degree F, or until golden
Once the chicken has been cooked through and crispy, coat it with the prepared sun-dried tomato glaze
