Sun-Dried Tomato Hummus

Ingredients
- 1 15-oz. can garbanzo beans
- 1/4 C. olive oil
- 1 clove garlic, cut in half
- 2 Tbs. lemon juice
- 1/2 tsp. salt
- chopped fresh parsley
- 1/3 C. chopped sun-dried tomatoes (packed in oil)
- pita bread wedges, crackers or raw vegetables, optional
Directions
In blender or food processor, place beans, oil, garlic, lemon juice and salt. Cover and blend on high speed, stopping blender occasionally to scrape sides if necessary, until uniform consistency. Stir sun-dried tomatoes into blended mixture. Spoon into serving dish. Garnish with parsley. Serve with pita bread wedges.
