This sunrise baked egg and bacon potato bowl is fantastic. It’s super fun to make and simple too.

  • 2 potatoes for baking
  • 1 T. butter
  • 2 stripes of bacon, crumbled
  • 2 eggs
  • 2 T. Gouda cheese
  • Salt
  • Pepper
  • 1 T. parsley, chopped

Cut the top of the potato off, lengthwise. Take out the potatoes filling. The skin of the potato will take place of a bowl. Repeat this for the other potato. Put ½ T. of butter into each potato. Break an egg into each potato; try not to break the yolk. Top it off with cheese, parsley, bacon, salt and pepper. Let the potatoes bake for 25 minutes at 350 degrees.
