Sunset Chili
Ingredients
- 4 lbs. Ground lean turkey
- 2 to 3 Tbs. vegetable oil
- 2 (28 oz.) cans whole tomatoes in juice, cut up
- 2 (15 oz.) cans tomato sauce
- 2 C. light beer (or water)
- 1/4 C. Chili Seasoning Mix (see below)
- 2 (28 oz.) cans pinto beans, optional
- Seasoning Mix:
- 4 tsp. cumin seeds
- 2 tsp. dried oregano
- 2 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. crushed dried red pepper
- ¼ C. ground red chili pepper or cayenne
- ¼ C. paprika
- 2 Tbs. dried minced onion
Directions
In a large chili kettle, brown meat in oil, stirring occasionally. For seasoning mix: combine all ingredients. Add tomatoes, tomato sauce, beer and seasoning mix. Bring to a boil; cover and simmer for 45 minutes. Rinse beans; drain and add to chili mixture. Cover and simmer 15 to 20 minutes.
Makes 15 to 20 servings.
