Sunshine Cake

A very light and delicious dessert cake. Great for potluck dinners or get togethers. A nice ending to a great meal.

Ingredients

  • 1 yellow Cake mix
  • 4 eggs
  • 1/2 C. oil
  • 1 can mandarin oranges with juice
  • 1 sm. box instant vanilla pudding
  • 1 can crushed pineapple with juice
  • 1 9-oz. container Cool Whip, thawed

Directions

Blend the cake mix, eggs, oil, and mandarin oranges with juice with a mixer. Grease cake pan and pour mixture into pan. Bake at 350 degrees for 25 minutes. Let cool. While cake is cooling, mix together the instant pudding and crushed pineapple with juice. Add Cool Whip and mix gently. When cake has completely cooled, Spread topping over cake. Best if kept in the refrigerator.

  • I'm sure you could use two round cake pans as well and if you do this please make sure you change the baking time, you don't want to over bake this cake. And yes, with the cool whip that tops this cake, it is wise to put it in the refrigerator. That is, if there is any of the cake left. That is the wonderful things about recipes, you can change them around a little and make them, YOUR OWN. Be creative and make sure you write down what you do when you change them, so that you can make them again,

  • I have made this cake before but it was called Mandrian Orange cake. It was first made for me when my fahter-in-law died. Although it was a sad time, the cake was a comforting gesture. My instructions state that it must be refrigerated. And also I use two round cake pans

  • Thank You, nawade325, for answering the questions. It is a 9X13 inch cake pan and I use the large can of mandarine oranges as well as the large can of pineapple. But that is to my families taste. You can use the small can of oranges as well.

  • I've made this before.. you use a 9 by 13 pan, and you use a small 9 oz. can of oranges and a 20 oz can of pineapple. It is absolutaly delicious... We called it a Hawaiin cake.
