  • 4-6 slices bacon, diced
  • 1 ½ C. onion, diced
  • 4 C. potatoes, peeled and cubed
  • Salt and pepper to taste
  • 3 C. half-and-half
  • 3 T. butter
  • 2 (10 oz.) cans minced clams

In a large pot, cook bacon until crispy and add in onions; sauté until softened. Add in potatoes with 1 ½ cups of water and season with salt and pepper. Bring to a boil for 15 minutes until potatoes are tender. Stir in half-and-half, butter, and clams with half of the juice from the can. Cook for about 10 minutes until hot and serve.
