If you’ve got leftover sweet potatoes and a couple of eggs, you can make a delicious and low-carb batch of pancakes! Add your favorite seasonings and pile on the toppings for this post-holiday brunch dish.

  • ½ cup mashed sweet potato
  • 2 eggs
  • Coconut oil
  • ¾ teaspoon ground cinnamon
  • pinch of ground ginger
  • pinch of allspice
  • pinch of salt

Combine together the sweet potato and eggs and whisk until well-combined. Add in the cinnamon, ginger, salt, and allspice for taste. Then add coconut oil in a pot (1 tablespoon) over medium-low heat.
Throw in the sweet potato mixture by tablespoon ( 1 tablespoon= 1 mini pancake) and cook for 3-5 minutes on each side.
Then, remove from heat, let cool and serve with desired toppings.
