  • 2 lb. beef, cut into bite-sized pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 C. mushrooms, sliced
  • 1 ½ C. beef broth, divided
  • 2 T. Dijon mustard
  • 1 T. Worcestershire sauce
  • Salt and pepper to taste
  • 1 tsp. dried thyme
  • 2 T. cornstarch
  • 1 (8 oz.) package cream cheese
  • ½ C. sour cream
  • ¼ C. parsley, chopped

In your crockpot, add in beef, onion, garlic, mushrooms, 1 cup of beef broth, Worcestershire sauce, salt, pepper, and thyme. Mix well, cover, and cook on high for 4 hours. Whisk together cornstarch and remaining broth and pour into crockpot; stir and cook for 20 to 30 minutes until mixture thickens. Stir in cream cheese, mustard, sour cream, and parsley. Heat through and serve over steamed rice.
