Super-Simple Spicy Jambalaya

Try and say that 5 times fast! This super-simple and spicy jambalaya is perfect if you want a little Cajun flavor in your house. Serve this with an iced tea and some crusty bread and you'll be set.

Ingredients

  • 2 teaspoons olive oil
  • 2 boneless skinless chicken breasts, cut into bite-size pieces
  • 8 ounces kielbasa, diced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1/2 cup diced celery
  • 2 tablespoons chopped garlic
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon onion powder
  • salt and ground black pepper to taste
  • 2 cups uncooked white rice
  • 4 cups chicken stock
  • 3 bay leaves

Directions

Saute the chicken and sausage over high heat in a large stockpot for six minutes, or until the outsides have browned evenly. Add the onion, peppers, celery, and chopped garlic. Cook an additional six minutes or until the peppers are tender and the onions are translucent. Add the rice, chicken stock, and bay leaves and stir completely. 


Boil the mixture, cover, lower the heat to medium-low, and allow to cook for 20 minutes. Serve.
