This turkey pepperoni sandwich is so convenient because it is easy, and can be made ahead, and gets better as the flavors combine over time.

  • 1 10-inch round loaf French bread
  • 1/4 C. olive oil
  • 1/2 C. mayonnaise
  • 2 cloves garlic, minced
  • 2 oz. chopped black olives
  • 2 tsp. dried oregano
  • 3 lg. tomatoes, sliced
  • 1/2 lb. sliced smoked turkey breast
  • 6 oz. sliced salami
  • 1/4 lb. provolone cheeses, sliced
  • 6 oz. marinated artichoke hearts, drained
  • 1 mild red or white onion, sliced

Cut bread in half horizontally. Hollow out some of the soft bread from top and bottom, leaving a 3/4 inch shell. In a small bowl, combine the olive oil with the garlic, mayonnaise, oregano and olives. Spread the inside surfaces of bread shells with the mixture.

Layer 1/3 of tomato slices on the bottom bread crust, then top with alternate layers of turkey, pepperoni, cheeses, 1/2 the remaining tomatoes, artichoke hearts, and onion. Top with remaining tomatoes and the top crust. Press down firmly and wrap tightly in plastic wrap and foil. Refrigerate. Just before serving, place the wrapped sandwich on a flat surface and press down firmly to flatten. Unwrap and cut into wedges.
