Super Stuffed Turkey

Ingredients
- 10-lb. turkey
- 1 lb. chopped beef
- 1/2 lb. sweet Italian sausage, skinned and chopped
- 2 eggs
- 1/2 C. grated parmesan
- 1/8 tsp. nutmeg
- 15 boiled and peeled chestnuts, mashed
- 2 slices bacon, diced
- heart, liver and gizzard of turkey, boiled and chopped
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 1/2 C. butter
- 2 slices prosciutto
- 1 sage leaf
- 1/2 tsp. rosemary
- 1/2 C. wine
- 1 tsp. flour
- 1 C. water
Directions
Mix beef, sausage, eggs, parmesan, nutmeg, chestnuts, bacon, heart, liver and gizzard together and add half the salt and pepper. Stuff turkey and sew the opening up. Melt butter in a Dutch oven. Place turkey in it and put prosciutto, sage and rosemary over turkey. Brown turkey on all sides. Then add wine. Cover pot, lower heat and keep cooking for 3 hours. Add water when necessary and baste frequently. When turkey is tender, remove from pan and put on serving dish. Blend 1 tsp. flour with pan gravy and add 1 C. water. Serve the gravy over the turkey.
