  • 4 russet potatoes
  • ½ stick butter, unsalted
  • ½ C. sour cream
  • 1/3 C. cheddar cheese, shredded
  • 1/3 C. Monterrey Jack cheese, shredded
  • 1/3 C. Parmesan cheese, shredded
  • Salt and pepper to taste
  • 4-6 strips bacon, cooked

Bake potatoes directly on the rack at 425 degrees for an hour until tender. Reduce heat to 400 degrees. Cut a slit in the potatoes, scoop out the flesh, and transfer it to a bowl, leaving skins intact. Mash the potato flesh and combine with butter, sour cream, cheeses, salt, and pepper. Spoon mixture back into potato skins, add bacon, place on a baking sheet, and bake for an additional 20 minutes.
