  • 18 large shrimp, peeled and deveined
  • 2 tsp. Cajun blackened seasoning
  • 1 pkg. Italian sausage links
  • 1/2 C. tomato sauce
  • 4 C orzo, cooked and drained
  • 1 C. frozen peas, defrosted
  • 1/4 C. fresh lemon juice

In a large bowl, toss together shrimp and Cajun seasoning. In a heavy skillet, cook sausage for five minutes. Cut into one-inch slices and finish cooking. Remove sausage from pan and cook shrimp until almost done. Add orzo, tomato juice, peas, and lemon juice to pan and cook for one minute. Return sausage to pan and continue cooking until mixture is heated thoroughly. Serve immediately
