Susie's Succulent Sausage Salad

- 1 package of Italian sausage
- 1 head of lettuce
- 16 cherry tomatoes
- 1 red onion, chopped
- 1 large avocado
- 1/4 of a cucumber
- 1 tablespoon of red wine vinegar
- 1 tablespoon of olive oil
- 1 teaspoon of sugar
- 1 tablespoon of mustard
Begin by heating the oil in a deep frying pan. Using cooking scissors, snip the sausages into quarters and place them in the pan. Be careful when dropping the sausages in the pan as the oil can splatter. Once all the sausage is in the pan, add the onion. Fry this up for about two minutes, stirring occasionally to be sure that everything is browned. Next, add the mustard, sugar and the tomatoes. Cook for about 2 minutes or until the mixture is coated with the mustard glaze. Remove from heat.
Next you want to break up the lettuce and slice the cucumber. Take a serving dish and put the lettuce and cucumbers on it. Next, spoon the sausage mixture over the lettuce. Add the vinegar and a small amount of water to the pan. This will allow all the leftover flavor remaining in the pan to come off. Pour over the sausage mixture.
This dish is excellent when served with toasted bread and butter.
