Swedish Meatballs with Noodles

My Irish mother-in-law showed me how to make this dish and for years everyone would jump at the chance to eat it. It looks appetizing and tastes really great with noodles as a main course or just put toothpicks next to the platter and serve as an appetizer with no noodles.

Ingredients

  • 1 lb. beef chopped meat
  • 1 egg
  • 2 C. milk
  • 1 can cream of celery soup
  • 6 slices of white bread
  • 1 lb. noodles
  • Salt
  • Black pepper
  • Parsley
  • 1/2 C. parmegiano/romano grated cheese

Directions

Break up the white bread and soak in 1/2 C. of milk and put aside. In the chopped meat, break the egg and add along with salt, pepper, grated cheese, parsley and 1/2 C. of milk and mix well. Then mix in the milk-soaked bread. If the meat is too mushy add more bread to make it a bit firmer.

Make small round meatballs and place in a tin pan. Pour the can of cream of celery soup mixed with the remaining cup of milk all over the meatballs in the pan. Place in the heated oven at 350 degrees for 45 minutes. Cook noodles in the meantime and when done, drain well and place in pasta bowl. Pour the cooked meatballs and sauce all over and mix well. Serve immediately.
