  • 8 oz fine egg noodles
  • 2 tablespoons butter, melted
  • 1 large carrot, peeled and grated
  • 1 large baking apple, peeled, cored, grated
  • 1/2 cup golden raisins
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Lime to garnish

Preheat oven to 350 degrees. Grease 1 1/2 quart casserole dish. Bring water to a boil under medium-high heat, and cook noodles until tender. Drain, rinse under cold water, and drain again. Combine noodles, butter, carrot, apple, raisins, eggs, milk, sugar, cinnamon and salt in a large bowl and mix well. Put into casserole dish. Bake until top is crisp, golden, and it feels firm. Serve warm or cold. Garnish with lime.
