Sweet and Crunchy Raisin Granola

There is no better way to start your day than with a wholesome and nutritious bowl of granola. Breakfast is one of the most important meals of the day and skipping it can lower your energy level and leave you searching for junk food by mid-morning. This crunchy granola is great with fresh fruit, low fat yogurt or milk. It is high in fiber and packed with nutrition and great taste.

  • Canola oil spray
  • 3 C. old fashioned rolled oats
  • 1/4 C. whole wheat flour
  • 1/2 tsp. cinnamon
  • Pinch of salt
  • 1/2 C. pure maple syrup
  • 1/3 C. canola oil
  • 1 C. raisins

Preheat the oven to 300 degrees. Lightly coat a baking sheet with canola oil spray. In a large bowl, combine the oats, flour, cinnamon and salt. In a separate bowl, whisk together the syrup, oil and vanilla extract. Add the liquid mixture to the oat mixture, stirring well until the oats are coated. Spread the granola across the baking sheet. Bake for 30 minutes. Remove the tray from the oven and sprinkle the granola with the raisins. Using a large spatula, mix the raisins and granola well, breaking up any large pieces. Return it to the oven and continue baking for an additional 20 minutes. Allow the granola to cool completely. Store it in an airtight container in the refrigerator or freeze some for later use.

  • This granola is very good and easy to make. I have several suggestions; first, vanilla is included in the directions but not in the list of ingredients. I added 1 teaspoon, and it was very yummy! Also, I only had to bake it for the first 30 minutes; it was done by the time I took it out to put raisins in. Altogether, this is a very tasty recipe!
