Spread one side of each of the eight bread slices with a dollop of honey mustard. Layer atop four slices of bread, in order, 1 slice of Swiss cheese, 1/4 of the ham, and a second slice of Swiss cheese. Top sandwich with one of the remaining bread slices, pressing down gently to help hold sandwich together. In a flat, shallow dish, combine eggs, milk, cinnamon, nutmeg, sugar, and vanilla. Spray a large skillet with nonstick cooking oil. Warm skillet over medium heat. Add 1 Tbs. of butter.
Dip each sandwich in egg mixture, turning to coat and letting any excess drip back into bowl. Place sandwiches in skillet. Fry one side until golden brown, then flip and continue frying until the other side turns golden brown and the cheese has melted. If skillet dries out, add additional butter as needed.
