Place the strips of bacon on a microwaveable plate and cook for 1-2 minutes until crispy. Spread 1 tablespoon of butter onto one side of each slice of sourdough. Place 4 slices of bread buttered-side-down into a large skillet. Layer atop each slice of bread, in order, 2 slices of cheese, a few thick slices of tomato, 2 slices of bacon, and 2 more slices of cheese. Top each sandwich with one of the remaining slices of bread, buttered-side-up. Place the skillet on a stovetop over medium-low heat. Grill the sandwiches for 2-3 minutes per side until bread turns golden-brown and cheese is fully melted. Serve warm.
