Ingredients

  • 1 pork tenderloin
  • 1 Granny Smith apples, peeled, cored, and chopped
  • ¼ C. golden raisins
  • ¼ C. dried cranberries
  • ¼ C. dry red wine
  • 1 T. butter
  • ¼ C. onion, diced
  • Salt and pepper to taste
  • ½ C. chicken broth

Preheat oven to 425 degrees. In a bowl, combine raisins, cranberries, and wine; set aside. In a skillet, melt butter and sauté onion and apple for 7 to 10 minutes until softened. Drain dried fruit and add to skillet. Season with salt and pepper, stir, and remove from heat. Slice pork tenderloin in half lengthwise, open up, and pound thin. Spread on fruit mixture, roll up, secure with toothpicks or kitchen twine, and place in a baking dish. Pour broth around tenderloin and bake for 20 to 30 minutes until cooked through.
