  • 2 Tbs. olive oil, divided
  • 3 C. fresh corn kernels
  • 1 small red onion, sliced
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 2/3 C. lump crabmeat
  • 2 Tbs. fresh lemon juice
  • Parsley to garnish

Heat 1 tsp oil over medium heat in a nonstick skillet. Add corn and cook for 3-4 minutes. Remove from stove and stir in onion slices. Season with salt and pepper. Add crabmeat, fresh lemon juice and remaining olive oil. Gently toss together. Cover and refrigerate for 20-30 minutes. Garnish with parsley and serve.
