Sweet and Sour Chicken

Ingredients
- 1/4 C. vinegar
- 1/3 C. sugar
- 1 Tbs. tomato paste
- 2 Tbs. soy sauce
- 2/3 C. pineapple juice
- 1 1/4 C. water
- 1 onion, quartered
- 1 green pepper, cut into squares
- 1 C. crushed pineapple
- 1 Tbs. cornstarch
- 4 tomatoes, quartered
- salt
- pepper
- 4 chicken pieces, cooked
Directions
Preheat the oven to 400 degrees. Mix the vinegar, sugar, tomato paste, soy sauce, pineapple juice and 1 C. of water in a pan. Add the onion, pepper and pineapple and bring to a boil. Mix the cornstarch with the rest of the water and add to the pan. Boil, stirring for 1 minute to thicken. Add the tomatoes and season. Pour the sauce over the chicken and heat through in the oven for 20 minutes.
