Sweet and Sour Meatballs
Ingredients
- 1 20 oz. can pineapple chunks
- 1/3 C. water
- 3 Tbs. vinegar
- 1 Tbs. soy sauce
- 1/2 C. brown sugar, packed
- 3 Tbs. cornstarch
- 30 batch meatballs, frozen or thawed
- 1 large green pepper, cut into 1" pieces hot cooked rice
Directions
Drain pineapple, reserving juice. Set pineapple aside. Add water to juice if needed to measure 1 C.; pour into a large skillet. Add 1/3 C. water, vinegar, soy sauce, brown sugar and cornstarch; stir until smooth.
Cook over medium heat until thick, stirring constantly. Add pineapple, meatballs and green pepper. Simmer, uncovered, for 20 minutes or until heated through. Serve over rice.

next time. Was a hit with my family. Used snow peas instead of bell pepper since my kids won't eat it.
