  • 1 lg. carrot
  • 2 celery ribs
  • 3 green onions
  • 1 fresh jalapeno pepper
  • 1 C. canned pineapple chunks, drained
  • 1 C. light mayonnaise

Grate carrot. Cut celery into 1/4-inch pieces.  Remove the roots from green onions and chop into 1/4-inch pieces, including the green tops.  Remove stem and seeds from jalapeno and cut into 1/4-inch pieces.  Combine carrot, celery, green onions, jalapeno, and pineapple in a medium mixing bowl.  Stir until well-mixed.  Add mayonnaise and stir until all ingredients are covered.
