Sweet and Sticky Upside-down Peach Cake

- 1/4 C. butter
- 1/2 C. brown sugar
- 1 1/2 C. pitted and peeled peaches
- 1 1/4 C. flour
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 C. softened butter
- 1 egg
- 1 tsp. vanilla extract
- 1/2 C. milk
Place the 1/4 C. butter into a square baking pan and place in an oven heated to 350 degrees until the butter melts.Add the brown sugar, stirring until the two ingredients are well combined. Spread the mixture evenly over the bottom of the pan and arrange the peach slices evenly over the top.
In a large bowl, mix together the flour, baking powder and salt. In a separate bowl, beat 1/2 C. butter with an electric mixer until smooth. Add in the sugar and beat until well combined.Add in the egg and vanilla, continuing to beat until smooth. Alternately add the flour mixture and the milk to the egg mixture, beating on low until combined.
Spread the batter evenly over the top of the peaches. Bake for 45 minutes, or until an inserted toothpick comes out clean. Cool in pan for 5 minutes before flipping onto a large serving plate, then continue to cool.
