Skip the traditional wings, try these awesomely sweet barbecue wings. The chili paste adds a nice vinegar element that breaks up the sweetness of the jelly while complementing it.

  • 1 ½ lb. chicken wings or drumsticks
  • 1 large pineapple, peeled, cored, and sliced
  • Olive oil for cooking
  • Salt and pepper to taste
  • For the Sauce
  • 1 C. grape jelly
  • 1 C. ketchup
  • ½ C. brown sugar
  • ⅓ C. molasses
  • 1 tsp. garlic, minced
  • ½ tsp. chili paste
  • ½ tsp. pepper

Preheat the oven to 425 degrees. Rinse the chicken and pat it dry with a paper towel. Heat a medium saucepan on medium-high. Toss in the garlic and cook for about 3 minutes with a drizzle of oil. Add in the rest of the ingredients and whisk together. Turn the heat down to low and let it simmer while the chicken is baking. Drizzle the chicken with olive oil and rub with salt and pepper. Brush some of the barbecue sauce on top and bake for 30-40 minutes, until the chicken is cooked through. Brush the chicken every 15 minutes with additional sauce. Broil the chicken for about 3-5 on high until the edges are crispy. Brush with more barbecue sauce.

Heat a skillet on high and glaze the pineapple slices with barbecue sauce. Cook the slices for 3 minutes on each side.
