Berries can always be used to improve a recipe and this easy three-berry cobbler is certain to impress. You can use cranberries, blueberries, and raspberries to put together a wonderful dessert that is made from scratch.

  • Filling:
  • 1/2 C. granulated sugar
  • 3 T. cornstarch
  • 1/4 tsp. ground cinnamon
  • 1 C. water
  • 1 C. fresh cranberries
  • 1 C. fresh blueberries
  • 1 C. fresh raspberries
  • vanilla ice cream
  • Topping:
  • 1/4 C. granulated sugar
  • 2 T. butter, softened
  • 1/3 C. low-fat milk
  • 1/4 tsp. vanilla extract
  • 1/3 C. all-purpose flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. sea salt

Take out a small heavy saucepan and use it to mix together the sugar, cornstarch, cinnamon, and water until the ingredients reach a smooth consistency. Bring the mixture to a boil and then cook and stir it for 2 minutes, which is around how long it should take to thicken. When finished, remove from heat and stir in the cranberries, blueberries, and raspberries. Take out an 8-inch square baking dish and spray it with cooking spray. Pour the berry mixture inside of the prepared baking dish. Take out a small bowl and beat the sugar and butter for around 2 minutes, which is how long it should take for the mixture to become crumbly. Beat in the milk and vanilla. Take out another bowl and mix together the flour, baking soda, and salt. Stir the flour mixture into the sugar-butter mixture until it is just combined. Add the topping to the filling 1-2 T. at a time. Bake the cobbler in your oven at 375 degrees F. for about 25 minutes, which is when the berry filling should be bubbly. Serve alongside vanilla ice cream.
