  • 1 9-inch refrigerated round pie crust, thawed
  • 2 ripe peaches, sliced
  • 3 Tbs. bourbon
  • 1/3 C. packed brown sugar
  • 1 egg white, lightly beaten
  • 2 Tbs. sugar
  • Powdered sugar

Preheat oven to 375 degrees. Line a large baking sheet with parchment paper. Roll out pie crust onto baking sheet. In a large bowl, combine peaches and bourbon and toss together. Allow to sit for 15 minutes. Add brown sugar and toss to evenly coat the peaches. Begin arranging the peach slices in a circle, leaving 2 inches from the edge.

Fold over edges, sealing any cracks. Brush with egg white and sprinkle with sugar. Bake for 25-30 minutes. Allow to cool and dust with powdered sugar. Serve.
