  • 2/3 C. shortening
  • 2 2/3 C. sugar
  • 4 eggs
  • 1 3/4 C. applesauce
  • 1/4 C. pineapple
  • 2/3 C. water
  • 3 1/3 C. flour
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. salt
  • 2/3 C. chopped walnuts (optional)

Cream together shortening, sugar, eggs, applesauce, pineapple and water. Add in remaining ingredients and mix well. Bake in clean, dry, wide mouth pint canning jars. Grease nine wide mouth pint canning jars with Crisco. Fill jars 1/2 full of mixture. Bake at 325 degrees for 45 minutes (without lids or caps) Remove from oven one at a time, clean sealing edge with paper towel or cloth and screw lids on snugly. Once sealed jars have cooled, tighten lids further if you can. As jars cool the heat will form a vacuum seal. You'll hear little "pinging" sounds as the lids seal themselves. When sealed this bread will keep on the shelf for up to 1 year.Variations:

2 C. apples, diced

1 3/4 C. apple sauce plus 1/4 C. raisins

2 C. mashed bananas

2 C. shredded carrots

1 bag fresh cranberries, chopped

2 C. pumpkin

2 C. zucchini
