  • Medium sized squash, preferably Kabocha squash
  • 8 Oz of Brown Sugar Cane
  • 1 orange, zested and juiced
  • 2 cinnamon sticks

Cut the squash in half and scoop out the guts inside. Slice the squash in wedges and cut off the skin.
Optional: Keep the seeds for more delights.
In a medium pot, add 2 ½ cups of water and 8 Oz of brown sugar cane in medium heat. Place the orange zest in mixture. Using a fine mesh strainer, squeeze the juice out of the orange. Stir for a minute and add the cinnamon sticks. Continue to stir until the brown sugar cane is dissolved.
Then, add the squash wedges and stir gently. Cook for 20 minutes or until the squash is tender.
On a separate plate, remove the squash and set them aside. Increase the heat to medium-high heat to start reducing the syrup. Stir the syrup for 15-20 minutes until it appears liquid gold thick.
Drizzle the syrup onto the squash.
