  • Cookie Cupcakes:
  • 2 sticks of butter, melted
  • 1 tsp. almond extract, optional
  • 1 tsp. baking soda
  • 3 1/4 C. all-purpose flour
  • 1/4 tsp. salt
  • 1 1/2 C. mini chocolate chips
  • 3/4 C. granulated sugar
  • 1 C. light brown sugar
  • 2 large eggs
  • 1 T. pure vanilla extract
  • Frosting:
  • 1/2 C. butter, melted
  • 1/4 C. unsweetened cocoa powder
  • 2 1/3 C. powdered sugar
  • 1 T. vanilla extract
  • 6 T. heavy whipping cream

Preheat the oven to 350 degrees. For the cookies you’re going to want to mix all of the ingredients in an electric mixer, except for the mini chocolate chip cookie. Mix for 5 minutes or until smooth. Add in the mini chocolate chips and mix them in with a wooden spoon. Line a cupcake pan with cupcake liners. Add in the cookie batter into each liner. Bake for 15-20 minutes. Let them cool. While this is taking place, make your frosting. Add all of your frosting ingredients into an electric mixer for 5 minutes. The texture should be smooth. Transfer onto the top of each cookie cupcake. Serve with a raspberry or fruit of choice.
