This turkey salad is so yummy. It combines all of the seasons amazing flavors to bring you one delicious salad. The squash is sweet and slightly crispy on the outside, it adds a great crunch to the bold dressing!

  • 8 oz. turkey, chunked
  • 2 C. spring mix
  • ¼ C. almonds, sliced and toasted
  • ¼ C. dried cranberries
  • ¾ C. butternut squash, diced
  • ½ red apple, thinly sliced
  • Dressing
  • 1 C. water
  • ¼ C. cold water
  • ¼ C. soy sauce
  • ⅓ C. brown sugar
  • 2 Tbs. cornstarch
  • 2 Tbs. honey
  • 2 tsp. garlic, minced
  • 12/ tsp. ground ginger

In a saucepan, combine the cup of water, soy sauce, brown sugar, honey, garlic, and ginger. In a small separate bowl, whisk together the cold water and cornstarch until it dissolves. Add it into the saucepan and whisk until it thickens. Set the sauce aside and refrigerate.

Preheat the oven to 425 degrees. Lightly rub the squash with olive oil and salt. Bake the squash for 20-25 minutes until it’s just tender. Toss all of the salad ingredients together and then drizzle it with dressing.
