  • 1 ½ cups of vegetable oil
  • 1 ½ cups of sugar
  • ½ cup of brown sugar
  • 3 eggs
  • 3 cups of all-purpose flour
  • 2 teaspoons of ground cinnamon
  • ½ teaspoon of ground nutmeg
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt
  • 3 ½ cups apples, peeled and diced
  • 1 cup of walnuts, chopped
  • 2 teaspoons of vanilla extract
  • Caramel icing:
  • ½ cup of brown sugar
  • 1/3 cup of light cream
  • ¼ cup of unsalted butter
  • Dash of salt
  • 1 cup of confectioner sugar

Preheat the oven at 325F.
Using a large mixing bowl, first combine together the oil and sugars. One at a time, add the eggs and beat them well after every addition.
In the same bowl, combine the dry ingredients to the batter and stir nicely. When the batter is nicely incorporated, fold in the apples, walnuts and vanilla.
Using a 10 inch tub pan, grease and flour the pan. Pour th1e batter into the pan and bake for 1 ½ hours. Or use a toothpick to check if the cake is fully baked.
Let it cool for 10 minutes and place it on a wire rack to cool completely.
Caramel icing:
In the top of a double boiler over simmering water, heat the brown sugar, cream, butter, and salt until it is nicely dissolved. Let it cool to room temperature. Combine the mixture with confectioners’ sugar until it becomes smooth. Drizzle the sugar mixture all over the cake.
