With a small sharp knife, cut the end from each plantain and halve crosswise. Cut lengthwise slit through the skin along the inside curve. Pry the skin from the plantain and cut the flesh crosswise into 1/8 in. slices.

In a large deep skillet, heat 1 1/2 in. of oil to 375 degrees. Fry 12 to 15 plantain slices at a time for 2 to 3 minutes, or until they are golden. Transfer them to a paper towel and season with salt. Serve immediately.
