  • 1 lb. carrots, sliced round
  • 2 Tbs. butter
  • 2 Tbs. honey
  • 2 Tbs. orange juice
  • 3/4 tsp. ginger, ground
  • 1/8 tsp. nutmeg, ground
  • 1/8 tsp. salt
  • 1/2 tsp. parsley flakes

In a skillet, put the carrots, water, and 1 Tbs. butter and cook on medium heat, uncovered for 5 to 6 minutes or until carrots are tender. Add the honey, orange juice, butter, ginger, nutmeg, and salt. Cook for another 4 to 5 minutes, stirring frequently. Sprinkle with parsley just before serving.
