Sweet Grilled Peaches with Mascarpone Cheese

- 8 oz. mascarpone cheese
- 1 vanilla bean
- 4 peaches, halved and pitted
- Canola oil
Split the vanilla bean down the center with the tip of a sharp knife. Add vanilla seeds to mascarpone cheese. Stir to combine.
Coat peach halves with canola oil. Place pit removed side down on the grill for 3 to 5 minutes, or until the peaches are warm and have grill marks on them.
Fill the peaches with a large spoonful of the vanilla mascarpone and place on plate.
