Although this recipe is very quick and easy to make, it still tastes unbelievably good. Adding some vanilla bean seeds into the mascarpone cheese makes it taste much sweeter. This is a great dessert to make if you're craving something sweet but don't have a lot of time to spare.

  • 8 oz. mascarpone cheese
  • 1 vanilla bean
  • 4 peaches, halved and pitted
  • Canola oil

Split the vanilla bean down the center with the tip of a sharp knife. Add vanilla seeds to mascarpone cheese. Stir to combine.

Coat peach halves with canola oil. Place pit removed side down on the grill for 3 to 5 minutes, or until the peaches are warm and have grill marks on them.

Fill the peaches with a large spoonful of the vanilla mascarpone and place on plate.
